Description
There was a small spot near the old hardware store, cheap enough, with a hood already in the ceiling. Lindsey had the landlord’s number written on the back of a receipt. Del stopped her before she called it. He had spent thirty years moving other people’s pickles and jam onto grocery shelves across the upper Midwest, and he asked whether she had run the actual numbers. She had not.
Detroit Lakes has about 10,000 people year round. It already has El Loro, Don Pablo’s and Miguel’s Tacos. A dine-in restaurant nets its owner five to eight cents on the dollar after rent, staff and food cost. To clear $10,000 a month in her own pocket, Lindsey would need to sell roughly $150,000 of food a month out of one small room. The dine-in idea did not fall a little short. It fell short by a distance no amount of working harder would close.
Why one kitchen caps a Mexican restaurant business plan
The seat ceiling
Her next idea was a summer food truck for the lake crowd. Del let her get a week in before he pointed at the obvious. A truck is a kitchen with wheels. One kitchen, truck or counter, physically tops out near 70 to 80 orders a day no matter how long the line is, and the tourist season in Becker County is about fourteen weeks.
The brand ceiling
The competitor scoring made the truck worse. On the one thing a distracted tourist actually chooses by, a recognizable name and a polished operation, Paradiso and El Loro both beat a brand-new truck badly, because a new truck has no brand at all. Lindsey could win on the food. She could not win on the thing the tourist picks with.
The kitchen is the reason people care. It was never going to be the reason the business works.
The first version that failed the math
So she swung the other way: catering first. Weddings on the lakes, the corporate lunch crowd in Fargo, WE Fest week. The model liked catering in June, July and August. Then it hit November and the line fell through the floor and stayed there until May. Catering by itself was a seasonal business wearing a year-round costume, and the 25-month model would not hold $10,000 a month of profit through a Minnesota winter on it. When a model fails a check like that, you do not tune the assumptions until it passes. You change the shape of the business.
